4. The Six Types of Teas

Armed with the two basic guidelines of tea pairing, you can now apply them to the different types of teas.

4.1 White Tea

As mentioned above, this delicate tea goes nicely with a lighter, airier dessert, like a custard or pound cake. For a more savory pairing, try some mild cheeses, like Camembert; a light salad like cucumber salad; or some white, flaky fish, like tilapia or filet of sole.

4.2 Green Tea

Green teas pair well with lighter foods, like fish and rice. That’s why you’ll often find Japanese tea served at sushi restaurants. 4.5 Dark Oolong

Having a stronger flavor, dark oolong pairs better with richer foods like roasted vegetables, muesli or granola and pancakes with maple syrup. Dark oolong also goes well with duck, as long as it’s not too greasy. As strong as dark oolong teas may be, they’re not strong enough to pair with greasier foods; for that, you’ll need a robust black tea. Despite being the "stronger" oolong tea, however, dark oolong teas like Da Hong Pao often possess a lighter roasted or smokier note, making them pair well with drier snacks like nuts or smoked or cured meats.

4.6 Black Tea

Among the stronger and more robust teas, black teas pair nicely with richer, heartier foods, like red meat dishes (on the savory side) and pastries, chocolate and other richer desserts (on the sweet side.) Black teas also tend to have a deeper, maltier flavor than other teas as well as a hint of astringency, like Assam tea, which pairs well with richer breakfasts like sausage and fried eggs, meat and pasta meals and spicy dishes.

An acquired taste for many, this darkest of teas fittingly pairs well with foods that may also have an acquired taste, such as rare or raw meats and strongly flavored cheeses. They also go well after meals as a digestive aid.
